Quick Tomato and Bean Soup

Can I make tomato soup in 15 mins?

Yes – this hearty, rich tomato and bean soup is ready in 15 minutes. Made using the ingredients of two tins and a stock cube. This recipe makes enough for 2/3 people.

1 x 400g of tinned tomatoes, 1 x tin of borlotti beans, 1 stock cube (kallo), 1 medium sized onion – chopped roughly, 2 cloves of garlic – roughly chopped, a dollop of natural yoghurt and a sprinkling of freshly chopped parsley, 1 x deseeded red chilli (optional). Oilve oil.

Add to a pan 2 tbs of olive oil. Tip in the onions and garlic and fry until the onions begin to turn brown. Add the chilli if desired. Add the tinned tomatoes and the tinned beans, stir. Make up 500ml of stock with the stock cube and add to the mixture. Put the lid on the pan and turn heat down so the mixture is bubbling but not boiling for 5-10 minutes. Remove from heat and blend.  Add a dollop of yoghurt and a sprinkling of fresh parsley. Serve with your favourite bread.
